DeleteScripting perspective you need not to worry about the flow, because you will do black box testing. So, if you have application UI then you can follow normal performance testing strategy.

Whether or not . png, html, css and other browser rendering specific activities need to be excluded from the extrarer part from the Loadrunner web request . ( HTML mode recording)

DeleteIt is not advisable to exclude image, js or css requests from EXTRARES. It will be a good approach to enable "Download non-HTML resources" option and leave the EXTRARES as-is. Also, if you keep the EXTRARES then it simulates the actual page loading and hence gives you the right performance numbers.
